Local flavor… That’s what our guests have come to know and expect from us here at Moonlight Basin. In Big Sky country that means three things; character, authenticity, and Montana hospitality. Enter Chris Rennau, Moonlight Basin‘s new Head Chef. A modern day renaissance man,  Mr. Rennau is a long time Big Sky local and life long student of the culinary arts. His menu reflects his passion for creativity, sustainable foods, and is inspired by local and organic products. Here are a few of his new culinary offerings.

The Naturally Raised Chicken is sure to become a Jack Creek staple.

The Naturally Raised Chicken– 100% vegetarian fed hormone free chicken stuffed with local Amaltheia organic chevre cheese made in the Bridger foothills outside Bozeman. Top it off with a rosemary apple fig compote and paired with parmesan risotto and greens.

Vegetable Napoleon– Stacked with regionally sourced, select vegetables including delicious Heirloom Tomatoes, eggplant, zucchini, and fresh summer squash. Add a healthy portion of Lifeline Farms Montana Mozzarella, and top it all off with a fresh rosemary spring and roasted red bell pepper coulis.
